Solterito de Quinoa

quinoa, fava beans, tomatoes, red onion, cilantro, fresh white cheese, black olives in a white wine vinegar

Causa de Pulpo al Olivo

yellow potatoes, charred octopus, ají amarillo, avocado & olive mayonnaise

 

Ají de Gallina

a traditional chicken stew, fusion of Spanish and Quechua ingredients from pre-Colombian times

Shredded chicken, ají amarillo creamy sauce, walnuts, Parmesan cheese, potatoes, eggs & rice

Arroz con Leche

rice pudding, cinnamon, orange
